Baked Cinnamon Toast

This is a fantastic comfort food for a cold Autumn or Winter morning, or when you’re feeling sick. My mother would make it for me often when I was a child, although I’ve altered her recipe with the addition of the icing. Enjoy!

Ingredients:

4+ slices of bread (wheat)

Butter for spreading

Even mix of cinnamon & sugar (I use raw sugar)

Icing:

Powdered sugar (1 c)

Vanilla extract (1 tsp)

Water (2 tbs)

Instructions:

Set oven at 350 degrees.

On a cookie sheet spread with foil, set out four or more slices of bread.  Spread butter on each slice.  Using a spoon, shake cinnamon & sugar mix over each slice until covered.  Place in oven until butter  is just melted & cinnamon a soft black. Bread should be soft, not crisp when you remove it.

For icing, mix powdered sugar with vanilla extract, then carefully add water a little at a time, mixing until you get the right icing consistency.  You can always add more powdered sugar if it is too runny or more water if it is too thick. Drizzle icing over slices of toast.
