Easy Perogies

Perogies are typically thought of as Polish or Slavic food and they were popular among peasants and immigrants. Today you can find them everywhere. They are basically a type of dumpling, similar to a ravioli and filled with things like mashed potatoes, cheese, broccoli, onion, etc.

These easy perogies are not made from scratch and are not something you’ll find among the list of healthy meals, but my husband and I enjoy the heck out of them on a lazy night when we want something quick, but good enough that it doesn’t feel quick. We like things flavorful and spicy, so feel free to tone it down if you’re a fan of milder food.

If you want to make them from scratch, Grandma’s Polish Perogies at All Recipes has rave reviews. I don’t particularly have an interest in making pasta from scratch.

Ingredients:

  • 1 package of frozen four-cheese perogies
  • 1/4 to 1/2 white onion chopped
  • 1 serving or more of broccoli
  • 3-4 cloves of garlic
  • 1-2 tbsp olive oil (or butter, but that’s even less healthy)

And liberal use of the following seasonings:

  • Season-all salt (this gives our particular recipe its bold flavor)
  • Ground pepper
  • Cayenne pepper
  • Italian seasoning (or rosemary, oregano, parsley, basil)
  • Chives
  • Salt (just a tiny pinch)

On the skillet (medium heat), cook the onion until it is slightly transparent (2-3 min). Add the perogies and broccoli. About half way through cooking, add the seasonings and garlic. If using fresh herbs, save them until just before the perogies are done. Cook perogies until they are slightly browned and crisp (10 min+).

Note: If using frozen broccoli and you like your broccoli soft enough that you can just cut through it with a fork, like my husband, preheat the broccoli in the microwave, then toss them in to crisp them up just a tad.
