Ok, this one is simple and hits the spot when you’re low on supplies and hungry. Feel free to add whatever veggies you have on hand. This list makes enough for two or more people. You can dish out just enough for what you need and store the rest as left overs (separate cartons).
1 c rice
1 can vegetarian black beans
bunch of asparagus (fresh or frozen)
salsa
vegan sour cream
pinch of cilantro
hot sauce (to taste)
pepper and sea salt (to taste)
Cook the rice per directions on bag and heat beans separately. You can steam the veggies in the microwave if you’re short on time, or toss them on the stove. Season the beans and veggies. Spoon a layer of rice into a bowl, followed by a layer of beans and a layer of veggies. Top with salsa, sour cream and cilantro!
If you have more time, it would be delicious to saute some onions, jalapenos and a little garlic. Even make your own pico de gallo. And remember, brown rice is better for you. Tastes great too.
